Chicken Casserole
- 1 rotisserie chicken, shredded
- 1 pkg shredded cheese
- 1 pkg fresh spinach
- 1 can cream of mushroom soup
- 1/2 cup mayonnaise
- 1 box stuffing
- 1 carton mushrooms
- 1/2 cup (or more) chicken broth
- Put shredded chicken in 9 X 13″ pan
- Sprinkle half the cheese over the chicken.
- Mix spinach, soup and mayonnaise (if too thick, add milk). Spread over chicken.
- Prepare stuffing mix as directed on the box.
- Spread stuffing over spinach mixture; sprinkle with sliced mushrooms, followed by the rest of the cheese.
- Pour chicken both over the casserole to keep it moist.
- Bake at 350 degrees for 45 minutes.
