Chicken Casserole

  • 1 rotisserie chicken, shredded
  • 1 pkg shredded cheese
  • 1 pkg fresh spinach
  • 1 can cream of mushroom soup
  • 1/2 cup mayonnaise
  • 1 box stuffing
  • 1 carton mushrooms
  • 1/2 cup (or more) chicken broth

  1. Put shredded chicken in 9 X 13″ pan
  2. Sprinkle half the cheese over the chicken.
  3. Mix spinach, soup and mayonnaise (if too thick, add milk). Spread over chicken.
  4. Prepare stuffing mix as directed on the box.
  5. Spread stuffing over spinach mixture; sprinkle with sliced mushrooms, followed by the rest of the cheese.
  6. Pour chicken both over the casserole to keep it moist.
  7. Bake at 350 degrees for 45 minutes.
